Spicy Lemon-Marinated Shrimp




Shrimps are one of my favorite foods to cook with. There are so many recipes that you can make with shrimp. I decided to explore Spicy Lemon-Marinated Shrimp.  Here is a list of what you need.



• 1 large lemon


• 1 1/2 teaspoons coriander seeds

• 3 tablespoons white-wine vinegar

• 1 tablespoon olive oil

• 1 tablespoon water

• 1 tablespoon sugar

• 1 1/2 teaspoons dried Aleppo flakes

• 1 tablespoon plus 2 1/2 teaspoons kosher salt

• 2 tablespoons pickling spices

• 1 lb. large (U 16/20) shrimp, shelled and deveined



Preparation:



Remove zest from lemon with a vegetable peeler and remove any white pith from zest strips with a sharp knife. Squeeze lemon juice. Finely grind coriander seeds in an electric coffee/spice grinder. Whisk together zest, juice, coriander, vinegar, oil, water, sugar, chile flakes, 1 tsp kosher salt in a large bowl until sugar and salt are dissolved.



Bring an pot of water to a boil with pickling spices and remaining salt and cook shrimp, 1 1/2 minutes, or until just cooked through. Transfer cooked shrimp with a slotted spoon to a colander to drain and add warm shrimp to marinade, tossing to coat.



Cool shrimp slightly and put in large sealable plastic bag with marinade. Marinate, chilled, turning bag occasionally, at least 8 hours. Drain shrimp before serving

Daiquiris are great to make anytime of the year. The most popular is strawberry, but I will teach you another yummy one. This recipe takes 5 minutes to make. Daiquiris are made of rum, sugar and lime.



1. You will need 2 oz of Light Rum or (1/4 cup)

2. One cup of sugar

3. One cup of water

4. Two ounces of key limejuice or (1/4 cup

5. One ounce of sugar syrup (2 tablespoons) - You can add more if you like

6. One cup of Ice

7. Cocktail Shaker


In a small saucepot, bring the sugar and water to a boil. Continue to stir until the sugar dissolves and becomes a syrup mixture.

Once you have the syrup mixture, allow it to cool down completely



In the cocktail shaker, combine the following:

2 oz of the fresh key limejuice, 2 oz of light rum, and 1 ounce of the cooled down syrup mixture and finally add your 1 cup of ice


Shake well and strain into a chilled cocktail glass. You can add lemon slices or any other fruit that you like.
